Zucchini roses with mortadella and cheese

A starter, an aperitivo or great finger food for any occasion. These zucchini roses are beautiful and taste grate! I made these a few days ago for my guests and they were speechless. What are you waiting for? Are you ready?? Happy recipe everyone!

  • 2 zucchini

  • 20/22 mortadella slices

  • 150 g of cheese (mozzarella or scamorza)

  • Salt

  • Breadcrumbs

  • Extra virgin olive oil

Instructions

  • First, slice the zucchine (I used a peeler and I obtained 44 slices). 
  • Add a little salt on the slices. I personally didn’t since the mortadella is already quite salty.
  • Cut the slices of mortadella in half and put each half on each zucchini slice together with some cheese.
  • Roll it up and stick a toothpick in it so that won’t open up. 
  • Now spray or brush some extra virgin olive oil on each rose and roll it in breadcrumbs.
  • Put the roses in a round 20 cm baking tin, spray more olive oil and bake at 180 degrees C for 20 minutes. 
  • Take them out and enjoy!
