2 zucchini
20/22 mortadella slices
150 g of cheese (mozzarella or scamorza)
Salt
Breadcrumbs
Extra virgin olive oil
Instructions
- First, slice the zucchine (I used a peeler and I obtained 44 slices).
- Add a little salt on the slices. I personally didn’t since the mortadella is already quite salty.
- Cut the slices of mortadella in half and put each half on each zucchini slice together with some cheese.
- Roll it up and stick a toothpick in it so that won’t open up.
- Now spray or brush some extra virgin olive oil on each rose and roll it in breadcrumbs.
- Put the roses in a round 20 cm baking tin, spray more olive oil and bake at 180 degrees C for 20 minutes.
- Take them out and enjoy!
